Fiesta Fajitas
A simple and yummy recipe, adapted from something I had at a restaurant.
Ingredients
2 chorizos, sliced
2 onions, sliced into rings.
1 large capsicum (bell pepper), sliced into strips
6 burritos
1 tablespoon lime juice
1 shot Tequila, optional (and one more for you, go on...)Instructions
Heat a large frypan and throw in the chorizos, turning when brown on one side. Add the onion rings to the chorizos. Toss the onion rings in the oil as the chorizos brown on the other side. No need to add extra oil, the chorizos should provide plenty.
After the onions are soft and sweet (about 10 minutes), add the capsicum and toss again. Add the lime juice and Tequila (and maybe another for you) and mix through, scraping the base of the pan to form a light sauce. Allow to cook until the capsicum has softened. Heat the burritos in the oven or microwave according to the instructions on the packet.*To serve, place the burrito on a place, add a little sour cream (if you like that sort of thing) and a small amount of the fajita mix. Fold up the bottom of the burrito first (so nothing falls out), then the sides and enjoy.
Variations
Replace one of the chorizos with prawns, beef or pork.
Serves
Makes six burritos.
